Chain of Custody

The chain of custody for The Atlantic Red Crab Company is second to none. From the moment the crab lands at our dock, we have instituted a series of five critical control points that ensure product safety and extend product shelf-life. These five points are as follows:

  1. Receiving: We constantly monitor the temperature and condition of the crab as it is received at our off-loading facility. This means that as our customer, you can be confident that our products are the freshest available.
  2. Cooking: Our cooking process is certified and strictly maintained through the use of a time/temperature matrix. We have worked with scientists to perfect our cooking methods and can guarantee you that you can taste the difference.
  3. Chilling: HAACP requires that we reduce our cooked product to 40 degrees (Fahrenheit) within four hours. We instituted a quicker chilling process thereby reducing this period to two hours. We think that you will agree that this produces a far superior tasting product.
  4. Metal Detection: All of our crab products are secured in tamper evident packaging prior to being packed in master cases and are screened by an automated metal detector that tests for ferrous, non-ferrous, and stainless steel particles.
  5. Finished Product Temperature Monitoring: Our freezers and holding coolers are equipped with temperature monitoring devices that send signals to a 24-hour alarm service. This ensures that all products leaving our holding facility have been monitored to guarantee the highest quality and safety standards in the industry.
